DINNER DILEMMA

I have a reoccurring dinner dilemma. Lately, the usual menu just hasn't sounded good and I need some fresh ideas. So, I'm calling on you (the best blog followers on the planet) to send me your favorite supper time recipes.

From your submissions I will pick a week's worth of delectable dinners and cook them for my family, who will then pick their favorite of those seven meals (I will even take pictures). The person who submits the family fave will win a fun little prize.

At the end of this endeavor I will also share some of my personal recipes with you.

There really aren't many rules. The recipe just needs to be reasonably quick and easy for sanity's sake. Also, feel free to instruct me on your favorite desserts and sides. Bring it on you seasoned chefs. We aren't picky and I'm excited to try your ideas.

  1. Store bought pizza crust, crust mix in a bag or crust in a can (Prebake if indicated on package)
    Mix 1/3 less fat block of cream cheese with 1/2 packet of taco seasoning (or make your own to cut back on sodium). I use chili powder, garlic powder, paprika, black pepper and salt. I'll also add adobo with cumin if I have it on hand and I'll just cut back on the salt
    Spread on Crust
    Top with Canned Refried Beans (mix in some taco sauce if desired)
    Top with cooked and seasoned ground beef, chicken, turkey, steak or bison
    Top with shredded cheese and bake as indicated on crust package
    Remove from oven and top with whatever toppings you'd like: Jalapenos, Bell Peppers, Sour Cream, Tomatoes, Onions, Olives, Cilantro-you get the picture

  2. Spaghetti Pie:
    ½ box whole wheat thin noodles of your choice
    ¼ C. Egg substitute
    ½ lb. ground turkey (or lean beef)
    ½ Jar Spaghetti Sauce
    ½ C. lo-fat cottage cheese
    ½ C Shredded Lo-Fat Mozzarella
    ¼ C. Parm.
    Italian Seasonings (basil, oregano, marjoram etc.)
    Salt & Pepper

    Cook Noodles and let cool. Brown ground meat. Add spaghetti sauce, cottage cheese and season to taste. Combine drained cooled noodles, parm and egg substitute and press into deep dish pie plate (or 2 regular pie plates)
    Cook for 10 minutes at 425
    Add sauce mixture and top with mozzarella. Bake for an additional 10-15 minutes until cheese is browned and bubbling

  4. PIZZA CASSEROLE
    1 pound BOB EVANS® Italian Roll Sausage
    12 ounces wide noodles, cooked according to package directions
    2 (14-ounce) jars pepperoni pizza sauce
    2 cups (8 ounces) shredded Cheddar cheese
    2 cups (8 ounces) shredded mozzarella cheese
    6 ounces sliced pepperoni





    Preheat oven to 350°F. Crumble and cook sausage in medium skillet over medium heat until browned. Drain on paper towels. Layer half of noodles in lightly greased 13x9-inch casserole dish. Top with half of sausage, half of pizza sauce, half of cheeses and half of pepperoni. Repeat layers with remaining ingredients, reserving several pepperoni slices for garnish on top of casserole. Bake 35 to 40 minutes. Refrigerate leftovers.

    So easy and good! When I worked at the daycare the kids loved it!

  5. Easy Green Enchiladas

    1 pkg of 8 frozen burritoes
    2 sm cans green enchilada sauce
    cheese

    pour one can sauce in the bottom of a 9 x 13 pan.
    arrange frozen burritoes over this.
    pour second can sauce over top.
    bake covered at 400 for 25 min.
    sprinkle with cheese and bake uncovered for 10 more min.


    MEGAN'S SPINACH PENNE SALAD

    3 c. fresh spinach
    3 c. cooked penne pasta
    1 can mandarin oranges
    1/4 cup dried cranberries
    1 pkg pre cooked chicken chunks (I use fajita flavor)
    raspberry vinagrette salad dressing (I use Brianne's)jj

    toss all ingredients together. This will still be good as leftovers the next day, because the spinach won't wilt as much as lettuces.

  6. TATER TOT CASSEROLE

    -1 lb very lean ground beef (or pretend ground beef as I am vegetarian)
    -1 can cream of mushroom or cream of celery soup
    -1 onion, chopped
    -salt and pepper to taste
    -2 cups shredded mozzarella cheese
    -32 oz bag tater tots

    Preheat oven to 350.
    Press and spread ground beef into bottom of 13x9 casserole dish.
    Evenly spread soup on top of ground beef.
    Sprinkle chopped onion over top of soup.
    Salt and pepper to taste.
    Sprinkle cheese over onion layer.
    Place tater tots in rows over the cheese.
    Bake at 350 45-60 min until tots are browned.
    Some folks like it with ketchup.
